Quesadilla Burger

Ingredients
1 Broad Street Butcher burger
2 small (6-inch) flour tortillas
3 oz. Pepper jack shredded
3 oz. pico de gallo
Chipotle sauce (recipe below)
Chipotle Sauce Ingredients
Makes 1 cup
3 oz. chipotle in adobo sauce
½ cup sour cream
½ cup mayonnaise
2 tbsp. minced garlic
2 tsp. hot sauce
½ tsp. cumin
½ tsp. paprika
1 tbsp. lime juice
Salt and pepper
Directions
Make chipotle sauce by combining all ingredients in a blender and blend until smooth.
In a large skillet set over medium high heat, cook the Broad Street Butcher burger by placing the portion on the pan and cook for about 2-3 minutes per side, or until browned and cooked through. Transfer to a plate and wipe out skillet.
Set the large skillet over medium-low, and heat 2 flour tortillas topped with 1.5 oz. shredded cheese each until melted. Once cheese is melted, top 1 of the tortillas with 1.5 oz. pico de gallo, and the place a cooked burger on top. Top with 1.5 oz. addition pico de gallo, drizzle with chipotle sauce, and cover with the other cheesy tortilla (with the cheese on the inside).
Cook until the bottom tortilla is golden brown. Carefully flip and cook about 5 minutes longer until both sides are golden brown. Serve with extra chipotle sauce on the side.
